You don't do this directly. What you have to do, is to edit the VM's settings and add an additional virtual disk. Once done the new disk will appear in the guest operating system and you may partition/format it using e.g. Disk Management in Windows. The datastore is just a container where the virtual disk files are stored, i.e. only visible to the ESXi host, but not to the guests.

How do I "add an additional virtual disk"? Is this correct?

I tried this option and browse to the datastore I've created, there is nothing there to choose from.
